Ingredients: They are mainly made with ground almonds (often the prized Avola almonds), sugar and egg whites, sometimes flavored with lemon or orange peel.
Consistency: They are crispy and slightly cracked on the outside, but extraordinarily soft, moist and chewy on the inside. They dissolve in the mouth with an intense almond flavour.
Special features: They are naturally gluten-free and are often decorated with a candied cherry, a whole almond or pistachio. Historically, the dough is also known as "Pasta Reale".
